Know which direction loses something. Going from a lossless format such as PNG, WAV or FLAC to a lossy one such as JPG or MP3 throws information away in exchange for a smaller file, and converting back does not return it, so keep the original if you may need it again. Turning an image into an SVG traces its shapes: it works well on logos and simple drawings and gives a messy result on photographs.

WAV to MP3 shrinks a recording to a fraction of its size, which is why it is the default for sharing; keep the WAV if you will edit the audio again. GIF to MP4 usually gives a much smaller file, and MP4 to WEBM suits websites that want small video files; both re-encode the video, so quality is similar, not identical. When a program only accepts one format, converting to MP4 is usually the safe choice, because almost every device plays it, though very large videos are scaled down to 1080p.
